First, let's dispel the biggest myth among tea drinkers worldwide: all teas come from the same plant species—the tea plant (scientific name: Camellia sinensis). Whether it's green tea, black tea, or oolong tea, their raw material is botanically identical. As for the "herbal teas" we often buy at the supermarket, like chamomile, peppermint, or passionflower, they cannot be considered "tea" in strict botanical terms—they're simply herbal infusions or tisanes.

1. Three Forms of the Tea Plant

Though the source is the same, not all tea plants look alike. Based on their growth habits, they fall into three main categories:

  • Arbor Tea Tree (Tree-type) : These tea trees can grow up to 30 to 40 feet tall. They are usually wild or semi-wild, such as the ancient, thousand-year-old tea trees found in Yunnan, China. 
  • Small Arbor Tea Tree (Semi-tree type) : These fall right in the middle, featuring a distinct main trunk but with lower branches growing closer to the ground.
  • Shrub (Shrub-type) : Shorter plants that usually only grow to about shoulder height, without a single main trunk. Most of the tea plants you see today in manicured tea gardens—neatly lined up like green hedges—are shrub-type teas, which makes them ideal for efficient hand-plucking.

2. The "Gold Standard" of Harvesting

When it comes to specialty tea, the harvesting standard is incredibly strict. Premium, high-quality teas typically use only the most tender, newborn parts of the tea plant: "one bud and one leaf" to "one bud and three leaves."

The Bud (Yá): The unopened, needle-like young tip.

The Leaf (Yè): The freshly unfurled, delicate young leaves.

These specific parts are the most vigorous areas of the entire plant, concentrating the highest levels of nutrients. While older mature leaves can still be used to make tea, they have lost much of their internal substances, resulting in a flat, bitter cup that completely misses the tea’s true, natural essence.

According to industry statistics, over 75% of the tea currently available on the market is low-cost commodity tea made from old leaves or "broken tea" (tea dust) .

To maximize yield and keep prices low, mass-market commercial brands use heavy machinery to perform large-scale, "buzz-cut" harvesting in tea gardens. This method indiscriminately shears off hardened old leaves, woody stems, and even twigs. These raw materials are then ruthlessly crushed and shredded by machines, producing what the industry calls "fannings and dust" — the sandy, grainy residue found inside traditional tea bags. This is often the kind of product we pick up from grocery store shelves.

Why does cheap broken tea "completely lack any natural flavor and can only be used in blends"?

  • Biochemical essence: As leaves age, the amino acids responsible for sweetness and aroma compounds sharply decline, while the levels of tannins and caffeine, which cause raw, grassy flavors and bitterness, surge dramatically.

This perfectly explains an interesting cultural phenomenon: why do most people tend to add large amounts of sugar, milk, lemon, or ice cubes to their tea? It’s not that people dislike the original flavor of tea, but rather because this cheap, broken old-leaf tea is just too bitter and astringent to drink on its own. Those strong flavorings, historically, were first used to mask the quality flaws of cheap, low-grade tea.

Amino acids (1%-4%)——The "soul" of tea.

With L-theanine being the most crucial. They contribute to the umami and sweet taste. When you sip a good tea and feel a mouthwatering sweetness reminiscent of chicken broth, that's the amino acids at work. They also promote the release of alpha waves in the brain, helping you stay alert yet relaxed and focused. The higher the amino acid content, the fresher and more refreshing the tea liquor. This is why spring tea is so expensive—the low temperatures in spring allow tea plants to accumulate high concentrations of amino acids.

Caffeine (2%-5%)——Responsible for bitterness and alertness.

They have identical molecular structures. So why doesn't drinking tea cause the same jitters or hand tremors as coffee? Because in tea, caffeine works in "bundle" with polyphenols and theanine, releasing slowly in the body. Despite their tiny proportion, they determine the tea's value. III. The Craft: The Magic of Fermentation

The same fresh tea leaves, processed with different techniques, can be transformed into six types of tea: black, green, white, yellow, oolong, and dark tea.
